Egg bites with bacon & cheese are exactly that.  Your main ingredients are eggs, bacon, & cheese.  The secret ingredient in this recipe is fresh parsley.  That is the key that gives it the subtle gourmet flavor.  If you don’t have fresh parsley, use any other herbs or spices you have on hand.

  • 12 Eggs
  • 5 slices of bacon (cooked & chopped up)
  • ¼ cup milk or heavy cream
  • 1 cup shredded cheese
  • 1.5 teaspoons salt

Steps To Make Baked Egg Muffin Bites

  1. Preheat oven to 400 degrees & spray your muffin tin with oil or line with muffin cups
  2. Cook bacon & set aside to cool & chop into small pieces
  3. Wash & chop parsley
  4. Whisk together eggs, milk, salt, & pepper in a large mixing bowl
  5. Put your bacon bits into the bottom of each muffin cup
  6. Pour egg mixture into muffin cups and fill them about 2/3 full
  7. Top each muffin with 1-2 tablespoons of shredded cheese
  8. Top each muffin with parsley
  9. Bake for 14-16 minutes or until they start to turn golden around the edges
  10. Let sit for 5 minutes & then enjoy your egg bites!

  • Grease your muffin sheet with oil or lard OR use muffin cup liners.
  • Prep the bacon ahead of time so it’s ready to chop up and use in the recipe.
  • Add any spices or herbs that you prefer to make it your own.
  • Store in the fridge for up to a week or use parchment paper to separate and store in the freezer for 3-6 months.
  • Reheat in the microwave for 30-45 seconds.

Another option to store egg bites is in the freezer.  You can place them all in a freezer bag and store them for 3-6 months.  If you only want to pull one out of the freezer at a time, individually wrap the bites in plastic wrap or separate them with small pieces of parchment paper.
