How To Make

This recipe is as easy as mixing ingredients together in a pot, heating, & then blending together. You can either use an immersion blender or regular blender to turn it into a smooth consistency.

Ingredients

  • ½ Medium onion diced
  • 3-4 Garlic cloves minced
  • 2 28oz cans Crushed tomatoes
  • 2 cups Chicken broth
  • 8oz Cream cheese cubed
  • 8oz Pepper jack cheese (shredded or cubed)
  • 3-4 teaspoons Sugar
  • 1 tsp Red pepper flakes
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • Olive oil
  • Dash of Worcestershire sauce (optional)

Directions

You can make this as easy or as gourmet as you choose.  I’ll give you the best way to do it below, but if you’re in a pinch, just throw it all in a pot and heat it for 5-10 minutes before blending.

Saute

For the best flavor, you should start by sauteing your garlic and onions.  Heat a medium pot over medium heat with olive oil or one tablespoon butter.

Saute onions for 2-3 minutes until translucent.  Then you’ll want to add your garlic to the pot to brown for 1-2 minutes until you can start to smell it.

Add Tomatoes & Chicken Broth

After you saute, it is time to add the crushed tomatoes & chicken broth.  If you want, you can use a blender to blend the tomatoes before adding to the pot.

Let it heat for 2-4 minutes until you start to see some bubbles.  Make sure to stir occasionally so it doesn’t splatter everywhere.

Add Cheese & Spices

When the liquids are nice & hot, it’s time to add the rest of the ingredients.  Add in your cream cheese, pepperjack cheese, sugar, red pepper flakes, salt, pepper, & Worcestershire to the pot.

It is easiest if you cube your cream cheese & shred your pepperjack cheese.  They mix in more smoothly.

Let everything heat over medium heat for 5-10 minutes until the cheese melts.

Blend & Enjoy

The last step is to blend the soup together.  You’ll want to use an immersion blender (or regular blender) to turn it into a smooth pureed soup.

You can leave it as is, if you choose.  It will taste just as delicious!

Garnish with more cheese, sour cream, basil leaves, hot sauce, or anything of your choosing.

  • Make a large pot by doubling or tripling the recipe.
  • Don’t have crushed tomatoes?  You can use diced tomatoes or fresh tomatoes instead.
  • If you don’t want to saute the onion & garlic, just throw it all into the pot together and blend once hot.
  • If you don’t have an immersion blender & you’re worried about blending hot liquid, you can blend everything together before heating.
  • Don’t feel like cutting vegetables?  You can substitute with 1 tablespoon of onion powder & 2 teaspoons of garlic powder.

  • Add chili powder, curry powder, or one teaspoon paprika for a nice spicy flavor.
  • Add a dash of hot sauce to really spice it up.

  • Don’t want any spice?  Use monterey jack cheese instead.
  • Don’t like cream cheese?  Use ½ cup of heavy cream instead.
  • Add a diced red bell pepper to the soup & blend it in for a sweet & smoky flavor.

Ingredients

  • ½ Onion diced
