I started making this white chocolate coconut cookie bar while I was pregnant to help eliminate too much sugar in my diet. (I was still craving sweets though!)

The clean up is very easy too. It’s just a matter of washing your mixing bowl and pulling the parchment paper out of your baking dish.

  • Butter
  • Honey
  • Egg
  • Flour
  • Baking Powder
  • Salt

How To Make

I make this recipe in my Kitchen Aid, but you can also make it in a mixing bowl.

  1. Preheat oven to 350 degrees.
  2. Line an 8×8 baking dish with parchment paper. *see tip below
  3. Microwave the butter & honey until soft. You don’t want them to be very hot, just enough to easily mix.
  4. Add in vanilla extract, egg, baking powder, & salt. Mix together.
  5. Next, you’ll add the rest of the ingredients: flour, shredded coconut & white chocolate chips.
  6. Give everything a good mix.
  7. Spread mix into baking dish & bake for 20-25 minutes.
  8. Let white chocolate coconut cookie bar cool completely before cutting.

Tips

  • Use clothes pins to hold your parchment paper in place (see photo below)
  • Start checking your white chocolate coconut cookie bar at the 20-minute mark. It should be golden brown around the edges and soft & springy on the top.
  • Leave the shredded coconut out if you don’t have any on hand.
  • Opt for regular chocolate chips if you prefer a darker chocolate.
  • Lime flavoring mixes really well with this combo of ingredients. It is kind of a play on the Starbucks Coconut Lime Bars.
  • It’ll cut more precisely if you let it cool first. If you can’t wait, then it’ll just be a little more crumbly, but still delicious!

  • 1 cup White Chocolate Chips

Instructions
