This bacon quiche recipe is easy and delicious.  You’ll love how simple the ingredients are.  You can go as homemade or as convenient as you’d like.

Use a store-bought pie crust if you don’t have time to make your own homemade pie crust.  Frozen pie crust bakes up just as well! 

You can also choose to use your own crisp bacon or a bag of bacon bits.  Buy a bag of bacon bits if you don’t feel like making a mess, it will taste just a yummy.

Ingredients

This bacon and cheese quiche recipe only uses a handful of ingredients.  You’ll need:

  • 5 large eggs
  • Half & Half (1.5 cups)
  • Bacon (1/3 cup)
  • Cheese (1 cup)
  • Pie Crust
  • Salt & pepper

I like to use a Colby jack blend of cheese, but you can use any other type of cheese you have on hand.  Some fun options would be mozzarella, cheddar cheese, Swiss cheese, parmesan cheese, or a combination of them!

Make It Your Own

Although this easy quiche recipe only uses 4 ingredients, don’t feel like you’re limited!  You can add any ingredients to it that you’d like.

If you don’t have half & half on hand, use heavy cream or whole milk.  You might also add a few extra spices in such as garlic powder or paprika.

Some other ideas would be veggies like green onions, bell peppers, yellow onion, mushrooms, or any other green veggies you enjoy.  Brown the veggies in a large skillet first or just toss them in raw.  Either way will be delicious!

You might also go with another breakfast meat such as ham, turkey bacon, or sausage.  The options truly are endless.

Instructions

This recipe is just a matter of laying out your pie crust & mixing the filling before baking.

1. Prepare Pie Crust & Preheat

First thing, you’ll want to do is preheat your oven to 350 degrees and have your pie crust at room temperature so it bakes properly on the bottom.

Lay your pie crust out in your pie dish and make sure it is laying smoothly along the bottom and sides.  To make your quiche look pretty, you can do a simple pinching along the edges (see photo below).

2. Prepare Filling

After your pie crust is in your pie pan, it is time to start preparing the filling.

First, crack your eggs into a large bowl & add the half & half.  Use a whisk to mix it together really well.

After the egg mixture is mixed together, add in your cheese & bacon.  Give it another good mixing with the whisk.

Pour your filling into the pie crust.

3. Bake

Every oven is different, especially when it comes to baking pies & quiches.  I bake my quiche at 350 degrees for 30-40 minutes.

At the 30 minute mark, I start checking the quiche to see if the inside is still jiggling.  I give the pie pan a light shake to check the middle.

I check every 2-3 minutes after that.  It usually takes about 36 minutes for my quiche to fully cook to my liking.

You’ll know the quiche is ready when the top starts to turn golden brown and you can stick a knife in the center and pull it out clean.

When the quiche is ready, allow it to sit for 5-10 minutes before cutting into it.  Serve and enjoy at this point!

Tips

  • Make sure your pie crust is room temperature so it cooks properly.
  • You can cook bacon yourself to crumble it with a food processor.  Or for a quicker recipe, use a bag of bacon bits.
  • Cooking time varies per oven, so make sure to check your quiche around the 30 minute mark, and every few minutes after.
  • If you don’t want to use bacon, ground sausage or diced ham also works well.
  • I use Colby jack cheese in this recipe, but any cheese will work great.
  • Go with a crustless quiche for a low carb option!  Leave out the pie crust and bake at 350 for 25-35 minutes.  For best results, use olive oil or butter on your pie dish before pouring in your egg mixture.
  • For extra flavor, you can saute veggies and add them into your quiche.
  • Wrap your leftover quiche with plastic wrap, parchment paper, or aluminum foil to enjoy later.

FAQs about bacon and cheese quiche

Using a blend of Colby jack cheese is a great option for quiche.  The cheddar and jack cheese mix nicely and melt easily.  You can use any cheese you have on hand though.

Yes! The texture will be slightly different, but it will still taste great.

It is really important to have your crust at room temperature for a proper bake.  If you have trouble with your oven baking pie crust, then you should do a blind bake.  Follow the instructions on your pie crust box for the blind bake (pre-bake).

  • 1.5 cups half and half
  • 1/3 cup bacon bits
  • 1 cup shredded cheese
  • 1 pie crust
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Place your unbaked pie crust in your pie dish.  Make sure it is room temperature so it cooks properly.  Pinch along edges of crust to make it look pretty.
  3. Combine eggs and half & half into a large mixing bowl.  Use a whisk to mix together.
  4. Add bacon bits & shredded cheese to the mixing bowl.  Mix again.
  5. Pour mixture into pie crust.
  6. Bake for 30-40 minutes until fully cooked.  Start checking around 30 minutes to see if the quiche stops jiggling when moved.  You'll know it is ready when it starts to turn golden brown and you can stick a knife in the middle and it comes out clean.
